Does the number of points of waveform memory change if I use more than one channel in the AWG5000/7000 series?

No. Memory is not shared between channels. The specified maximum number of points is the same on all channels. The one exception is AWG7102 when option 06 is active (interleaving ON) then the memory of channel 1 and 2 are combined.
